1 Preheat the oven to 180°C. Cut the top off the garlic head, drizzle with olive oil, wrap in foil and roast for 20-30 minutes.
2 Roast mixed seeds in the oven until toasty.
3 Wash and dry the kale, shred it, and dress with salt, pepper, olive oil, and lemon juice. Massage the kale.
4 Remove garlic from foil, mash the cloves, and mix with the kale.
5 Chop scallions and add to the kale mixture.
6 Prick the sweet potato with a fork and microwave for 3 minutes, turning halfway. Continue microwaving until soft.
7 Slice the sweet potato, add hummus, top with kale, crumbled feta, and mixed seeds.
