1 Preheat your oven as high as it can go.
2 Take the fish out of the fridge to take the chill off it before cooking.
3 Boil the potatoes.
4 Place the fish skin side down on an oven proof dish. Spread the fish with softened butter, season with salt and pepper, and add garlic slices and capers.
5 Roast the fish in the oven for 15 minutes until it flakes apart.
6 Sprinkle with herbs and squeeze lemon juice over the fish.
7 Serve with charred courgettes dressed with olive oil, salt, lemon zest, and chilli flakes.
