1 Peel and very finely slice the garlic and ginger, then put into a large cold non-stick frying pan with olive oil and place on medium heat, stirring regularly.
2 Once golden, scoop out the garlic and ginger, leaving the oil behind. Add trimmed asparagus spears to the hot pan.
3 Season steaks with sea salt and black pepper, add to the pan with asparagus, and cook for 3 minutes, turning regularly.
4 Toss in black bean sauce and red wine vinegar for 1 minute for medium-rare steaks, or cook to your liking.
5 Slice the steaks, dish up, and scatter over the crispy garlic and ginger.
