1 Add the oil to a pan, fry your chicken for 5-6 minutes, and set aside.
2 Add the butter to the pan and cook the onion, ginger, and garlic for 2-3 minutes until softened.
3 Add the spices and tomato puree to the pot and season with salt and pepper. Cook for two more minutes.
4 Add the chicken back to the pot, gradually stir in the stock and cream, and leave to simmer for 20 minutes before adding the squeeze of lemon.
5 Serve in true Irish style with half chips and half rice.
