This recipe makes a LOT of cookies. I keep them in the freezer so when a craving for something sweet comes my way, I know I am only a few minutes away from the perfect chewy in the middle, crispy on the outside cookie.

Plain flour – 320.0 g

Baking soda – 1.0 tsp

Butter – 220.0 g

Caster sugar – 140.0 g

Dark brown sugar – 140.0 g

Sea salt – 1.0 tsp

Eggs – 2.0 large

Dark chocolate chips – 200.0 g
Instructions

Place your butter in a bowl and in the microwave but just keep an eye on it!

Place the butter and sugars into a big mixing bowl and stir to combine with a wooden spoon.

Crack in your two eggs and stir them into the butter and sugar.

Sift in all the dry ingredients; flour, baking soda, and salt, and stir until incorporated.

Add the chocolate chips and mix to combine.

Roll the dough into balls the size of golf balls. Lie a freezer bag flat on the counter and carefully place them in. Pop them into the freezer as flat as you can.

When you are ready to bake, pop them onto a non-stick baking tray and leave plenty of room between each one. Bake for 8 minutes at 180C and allow to cool slightly.

They should be slightly golden around the edge but still quite soft. Once they start to cool, they will be soft and chewy in the middle and crunchy on the outside.

If you want to cook right away you’ll need to put the dough into the fridge for a minimum of 6 hours if not overnight.
