1 Cut the chicken into pieces.
2 Mix the soy, sesame oil, Shaoxing wine and cornflour.
3 Add 2 tablespoons of a neutral flavour oil to a pan. Add the garlic and ginger and cook over a low to medium heat until brown.
4 Turn up the heat and add the chicken, giving it a good mix in the oil and letting it cook a little.
5 Pour the sauce mix into the pan. Put on the lid and let it cook for 10 minutes. It might need a little water to loosen the sauce to your liking.
6 Add the basil right before serving.
7 Serve with plain rice.
